
As we have had quite a few healthy eating meat or fish related recipes recently I thought it was about time I provided something for the Vegetarians.
Healthy Eating From Yan - Green Bean and Lentil Salad
You will need 200g of puy lentils, vacuum packed are fine and fast! (Tesco, Morrison et al).

240g of fine cut green beans, trimmed.
1 Tbsp of chopped flat leaf parsley.
1 Tbsp of snipped chives.
1 sprig of thyme, leaves only.
1 Tbsp of chopped mint.
1 Tbsp of olive oil.
juice of one whole lemon.
1 tablespoon of balsamic, 1 tablespoon of cider vinegar.
3 carrots (yes I know there relatively high in sugar, but not so raw) peeled.
3 sticks of celery, trimmed.
To serve you will neeed 120g of baby spinach leaves.
240g of light feta, regular is ok....
The lentils are only a quick cook especially in the micro if you are pushed for time?
Cook the beans in a pan of boiling water for 4-5 minutes, when tender drain and plunge into cold water.
Place the lentils into a bowl, add the parsley, chives, mint, olive oil, lemon juice and vinegar and get your hands in and massage those leaves, it does make a difference to flavour..and flavour is everything with food!
Cut the carrots and celery into fine strips and fold into the dressed and pre cooked or warmed through lentils.
Arrange the baby spinach on a large plate, scatter on the green beans over the spinach and spoon over the lentil salad, crumble the feta cheese over the top..
Its 20 mins to prep, should serve 4, maybe 2 when you taste it!....
