Healthy Eating Catalan Tuna

On the menu today is a healthy eating tuna dish. If I had a pound for every can of tuna I have consumed over nearly 30 years competing and I could retire.....fresh however is Moi Bueno..(very good)

The tuna is an amazing muscle toner, as well as an incredible Omega boost... its an amazing protein great for your heart, blood flow and flexibility.

I was lucky enough to have two years coaching and teaching sports dietary requirements with some of The Spanish national athletic team, one recipe using fresh tuna was as follows..My Catalan Tuna fillet's.

Healthy Eating From Yan - Catalan Tuna Fillet's

To serve 4
2 tbsp of olive oil plus a little more for brushing
1 onion chopped
2 red peppers de seeded and chopped
1 garlic clove chopped
1 fresh chilli de seeded and chopped
400g tinned chopped toms
splash of cider vinegar (had to get it in somehow)
As long as your allergy free 50g of ground almonds
Oh yes the 4 fresh tuna steaks, approx 125g each
black pepper and a pinch or two of reduced salt boulion stock
Cooked bowl of French beans, so this meal is versatile for you lot looking at honing up for this summer
lemon wedges as much as you like!

Place a large frying pan with a little splash of light olive oil, add in the onion and peppers on a moderate heat.

Cook through until soft, then add the garlic and chilli stir for a minute or so, now add in the toms, splash in a little cider vinegar and bring to a simmer for around 15 mins.

You will need to give this mix with the ground almonds a good zuzz for 30 sec's in a processor or hand blend it after transferring to a mixing bowl.

Add your seasoning, if its not a pourable texture you may need to add a little water.

Now pre heat your grill, rinse your tuna under cold water, and dry off with kitchen towel.

Brush both sides of the fillet with the oil, cook under the grill for 2-3 mins or until its the texture of tenderness you like.

Place the tuna onto warmed plates, spoon over the Catalan sauce, serve with your cooked French beans and lemon wedges..

Great on workout days or as an evening meal, and any time pm.. When in Spain I never ate dinner until at least 9pm, Is there A BAD TIME TO EAT?...NO, JUST BAD FOOD CHOICE!...enjoy, Bon apetito..
